    Good intro but good sushi is in the rice as well as the quality and cutting of the fish. The guy didn’t even pump air to the rice and the making of the sushi rice is in itself an art.
    Good Japanese rice should stick uniformly to the chopsticks.
    I think this vid is for American. I doubt the guy in the vid is Japanese. Looks like Vietnamese to me.
