    Only if you use fine table salt. If you use coarse salt (such as Hawaiian Salt [my FAV]) it will flavor but not dry it.

    Agreed. I do almost everything these guys did, except I use charcoal, without exception. One other difference I’d suggest is searing the meat on both sides ASAP. After preheating the grill, throw the meat on, and after 3 minutes, flip em, cook for another 3, then repeat again. So, rule of thumb, 12 minutes total cooking time…3 minutes, flip, 3, flip, 3, flip, 3. This will give you a rare to medium rare steak.
