    I am confused about the salt issue. Personally I like the crisp, salty taste of the outer steak but keep hearing that salt dries out the meat. Both can’t be true can it? Does it have to do with cooking method? Hot vs slow? I would never put salt in a merinade because that surely would make it tough.

    Hello. You can sear it on a high heat, and then reduce the heat to med/low and cook the steak to med/well. You can also sear the steak on high/hot pan and then place the pan/steak in a 450 degree oven until it is med/well. Hope this helps.

    Great tip, thanks. How hot should the pan be to cook med well steak? Do you start out hot to sear it then lower the temp for thick cuts or keep it on high. I usually use my George Foreman grill, 3 or 4 minutes on each side. Is the timing the same in a skillet?
